The Department The Kitchen Department is responsible for producing high quality meals for all guests dining our Food & Beverage venues, including our Pearls Bar, Terraces Restaurant, Oasis Pool Bar, Oyster Bar, In Room Dining and Banquets. They are responsible for creating amazing dining experiences for our guests. Job Description We are currently seeking a qualified and experienced Part Time Demi Chef to join our busy food preparation team. As a member of our five star culinary team, you will work in several different areas of the kitchen, including a la carte, buffet, cold larder, mise-en-place and banquets. The successful applicant will work and responsible for daily kitchen management including: Daily preparation for kitchen service Inventory Control & Food Costing Management Maintain standards for food storage, rotation, quality, and appearance. Ensure compliance with QLD food safety regulations. Supervise preparation, cooking and presentation Provide input in menu development Schedule staff and assist in human resource processes as needed including induction for new staff for the kitchen team & training. Requirements The successful candidate will possess: Trade qualification in Commercial Cookery Previous Kitchen experience preferably within a luxury hotel environment Experience in a range of different cooking styles and preparation techniques is essential Exceptional communication, organisational and time management skills Extensive food knowledge and passion for quality and consistency The ability to perform in a fast-paced environment The ability to remain calm under pressure when responding to last minute changes Must also be available to work a rotating roster, including nights and weekends Education and Experience Requirements: Formal culinary training / culinary degree Minimum 2 years’ experience in fine dining restaurant Previous kitchen management experience The Benefits To attract and retain the best and brightest people for our team, we offer a range of exceptional benefits, including discounted onsite parking, discounted meals, exceptionally generous accommodation discounts, world class training programs and strategic career development opportunities.
